You have to unsubscribe what you don't want to download, there is no other way. Steam is lacking features to disable downloads - the only way is to unsubscribe.
If you open the Workshop in Steam, you can see a list of subscribed items on the right below your avatar, it is easy to unsubscribe to them there.
