Just a couple things, Please consider.
Thing is, I work full time and then some. I don't have time and generally can't catch any good or usable time on the expeditions, this has been a real downer for me. could you consider making some or all of the expeditions available on a permanent bases instead of time limited? I am always missing out because of my difficult work session and while it is a great game I can't recommend it for people with tight work schedule's.

It is possible to do (redo) all expeditions offline thanks to Leodium's guide:

The reality is, it's not that easy because of how frequently the game gets updated. Some updates can make Milestones on older expeditions obsolete or a new game mechanic can break a rendezvous.

The upside is that they seem to have started revisiting and updating older expeditions over the past couple years. This could be a good sign that they figured something out, but it's going to take awhile to get there.

I mean, this is Redux season, so it's different, but usually you have 2-3 months to complete an expedition that only takes a few hours to complete.

Until then, What Hellosa mentions, or similar methods, is your only option.

I almost thought we weren't going to see this post this week.

Even with expeditions running non-stop people have time to complain (but not play the expedition).

Expeditions is just a small part of the game. I don't ever play them, I think they are dumb, but that's my opinion. But to not recommend a good game because of one minor aspect seems asinine to me. Especially since there is a work around to play all the Expeditions if you want.

I'll admit, I don't play many other games, but I know a lot of other games have Seasons or Limited Timed events. Do those games get as many complaints as Expeditions do for NMS?

I'm not sure how updates have any influence on being able to play expos at any time...
It doesn't actually take a "mod"... it's a simple edit to a JSON file. All you are doing is editing the end date of the expos.
You have to play the expos offline or the file will be rewritten...

There are numerous people who play old expos regularly, I've never heard them mention broken missions... but I suppose the community missions wouldn't work... (though again, a simple file edit is all that's needed to get around such issues)

@theimortalbrock
Just thought it was worth mentioning, but HG doesn't actually respond to anything here... if you want to give them feedback/suggestions, then you have to submit a ticket via zendesk.

Also OP, the answer is that if you get good enough on your normal save you can make the expedition into a 1-day challenge by transferring high value stuff.

It's pretty satisfying, I get why speedrunners do what they do now.

I'd missed four of the Expeditions, and I've been playing through them, using the files Leodium provides. So far I've done three. You have to copy a file to a particular directory, for the Expedition you want to play, and keep Steam in offline mode while you play through the Expedition. (If you put Steam back online while not playing, it may update the file. But you can just copy it again.)

It's pretty straightforward. You just miss out on bases other people have built.
It is a great game in all of it's other aspects, thing is to consider when I way a busy work schedule I was truck driver for a large part of the time frame's, and would not see me home sometime's for weeks at a time. honestly if it was a bad game, it wouldn't bother me because I would move on to another game easier for intermittent play. expeditions may be a small part of the game, but they kind of work against people who don't get much time to play anyway, I just would like to see those rewards available for loyal players with less time to burn. though I admit it is harsh to avoid recommending this game to players in my situation, and as for other game's not getting as many expedition and limited time complaints, that could be because they are not as much fun as no mans sky.

I get that, but honestly why do you want a bunch of stuff everyone else has? For me at least, part of the enjoyment of the game is finding a cool ship that no one else has.
