Use Theme Mixer Mod.
Pick any other theme that doesn't have custom names as your base theme when you load the save / map. The first theme used determines several things including the names. Then use Theme Mixer Mod to add on the textures from Celtic Coast that you like.
I really hate the ruining around buildings. Looks like no one takes care of their yards.
It seems the names are built-in to the Theme rather than in a separate XML file, so there doesn't seem to be any way to turn them off.
IMO that mod you described that is incompatible with Environment Changer is suspect, but I know less about mods ;)

You can also use BloodyPenguin's Environment Changer mod, which takes off the biome requirement so that you have all map themes listed on the drop down.
