* I suspect the Gold Catfish can be caught at the Frozen Lake in any season at night, but for the sake of transparency I have only encountered it in the Autumn and Winter and by then I was done with my list.

By Season
Only six fish are available in specific seasons. For quick reference:
  • Spring - Starfish (Docks)
  • Summer - Blue Lobster (Dark Forest PM), Sea Bunny (Docks PM)
  • Autumn - Conger Eel (Frozen Lake), Pufferfish (Docks)
  • Winter - Goblin Shark (Frozen Lake PM)
Dyes


You get dyes by squeezing your fishes. All fish containing dyes are both available and gross all year round.

Black - Cuttlefish (Frozen Lake) or Octopus (Docks)
Blue - Blue Fin Tuna (Docks)
Brown - Urchin (Docks or Dark Forest)
Pink - Jellyfish (PM Docks or PM Dark Forest)
Rainbow - Rainbow Trout (Docks)
Red - Red Snapper (Docks)

Methodology
Actual results are not limited to the table above, which reflects my own gameplay experience and measurements. I recorded morning + clear weather catches first which are reflected above as "Always" and only included special conditions such as "PM" (Afternoon/Night) or "Rain" afterward.

Weather
Weather (snow and rain) did not seem to make any meaningful difference for fish availability in any season. The above table uniquely notes Flyingfish as being available on the Docks in the rain, but that is only because the single time I caught one at the Docks while measuring, it happened to be raining. I suspect that they are actually just a rarer drop at that location.

For real, this suit itches like CRAZY.
FAQ


Yeah but where should I fish though?
If you're fishing to top off your dyes, the docks at night have a chance for everything.

How do I get dyes?
Squeeze your fish by interacting with them through the menu to get those tasty dyes.

Can I do anything with these squeezed fish?
No, you can safely sell or discard them. I kept mine for the memories.

"Fishing booth"? What's that?
As you advance the story you can find Koji in the Dark Forest. See if you can help him!

What do I do with all these ******* bottles??!
You can cry into them and try to sell your tears to Rio at the Night Market.

What do I do with all these ******* wind-up fish toys?!?
Daisuke the fisherman will buy them from you in bulk at a decent rate at the Night Market.

Does the time of day matter?
Generally, yes. And in this game, some fish (eg. Jellyfish) are only available later in the day.

Does the weather/year/Night Market level affect fishing?
It doesn't seem to.

Some of these aren't technically fish...
And this question isn't technic-- Look over there! It's a cat riding another cat.
