With how much RNG is in drops and the like, I put together this for piece of mind. Won't post bosses due to spoliers and they drop reliably.

With trinkets, those can be found at Lama Games. However, with RNG, they may appear or not as prizes. Just look for the bag icon under the lama one if trinket hunting. Still, one or two took forever to show up in the prize list.
Monster list(without pictures)
Jungle:

Bullyfrog:

Don't get distracted by their apparent cuteness, they'll gang up on you the first chance they get. Cuteness can be deceiving, you should know this by now.

Charger:

These guys have the strongest bark, quite dense and highly resistant to almost everything. Imagine carrying around so much weight all the time No wonder they look perpetually angry.

Fruit Flinger:

Every flinger seems to have a unique mask with repeating patterns between them. I must have them all.

Boomer:

You won't see many boomers together. They are so excitable that the lightest touch makes them explode. If they weren't walking bombs I would pity their lonely existence.

Riverside:

Giant Bullyfrog:

You wouldn't know it, but the leaves on their heads are quite edible. Did you think we could grow a bullyfrog out of one? Makes you wonder...

Skullfish:

Don't be fooled, these aren't fish at all, no mater what they look or taste like. Yeah, I've eaten Skullfish, it's all part of my research. Don't you dare judge me.

Caraprawn:

Another example of how cutesy creatures are just monsters in disguise. They are pretty much defenseless without their wooden shell, so break that stuff quickly.

Flowermane:

I can only imagine what sort of twisted mind created this thing. This is the perfect example of absurdity, which we humans are very familiar with.

Flowermane Chick:

Are you noticing the same pattern as me? Creatures that appear one way, mostly weak and cute, but really only want to kill you? It's something to think about. Those eggs, though. Yum!

Touka:

These ones seem to be made out of the same kind of fungus as Boomers. Too bad they're so volatile, otherwise we could use them as weapons.

Cat cave:

Munk:

They're some of the most intelligent creatures of the bunch, which in reality means very little.

Munk Fanatic:

I know what you're thinking, and yes, you can actually eat the fruit from their staves. But no, I don't recommend it at all.

Discharger:

Did you know Dischargers store liquid in their tentacles? Yeah, that part you probably already knew. Apparently, they store about 25 liters of water.

Smoke Spirit:

These remind me of some shamans called Smokers, a sordid bunch. They dabble in smoke magic, clouding the mind of their victims and draining them of vitality.

Final zone:

Razor Mantis:

Most fashion their razor-sharp arms as spearheads, but I prefer the exoskeletons. Something about their sharpness and unwelcoming nature speaks to me.

Waffintoad:

There's a whole tribe of these toads out there, if you believe the stories. Some even say they play darts and get drunk on bug juice.

Spectral Bat:

I hate bats. I really, really hate them. The bloodsucking is one thing, but the meat-eating? There's something especially unnerving about that.

Veil Bird:

Even though these creatures seem to have the same origin as the rest, they seem very alien to me. Cannot quite put my finger on why that is.

Hunter:

A while ago, a hunter came here and helped train some of the others before going into the jungle. He's probably still in there. Thing is, these look like copies of him, as if something got a hold of him and started spouting clones or something.

Closing
Know the RNG made it hard to find the character story bits, but those are in comic form. And the journal entries aren't too hard to find after a few playthroughs.

Crazy thing, took near 50 games to find everything.
