MF DOOM's Mac and Cheese


Ingredients:
  • 5 cups cooked macaroni (approx. 4 cups uncooked)
  • 1 stick butter (1/2 cup)
  • 1 cup bread crumbs
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp sugar
  • 1 minced fresh garlic clove
  • 2 cups milk (whole or 2% for creaminess)
  • 8 oz Colby/Monterey Jack cheese, shredded
  • 4 cups shredded cheddar cheese
Instructions:
  1. Prepare the Macaroni:
  • Cook the macaroni according to package instructions until al dente. Drain and set aside.
  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C).
  1. Make the Cheese Sauce:
  • In a large saucepan over medium heat, melt the stick of butter.
  • Once melted, add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
  • Stir in the flour (if you wish to thicken the sauce, though not included in the ingredients) to create a roux and cook for another minute.
  • Gradually whisk in the milk, continuing to stir to avoid lumps. Cook for 4-5 minutes until the mixture thickens slightly.
  • Reduce heat to low and add the Colby/Monterey Jack cheese, stirring until melted and smooth.
  • Stir in the salt, pepper, and sugar.
  1. Combine with Macaroni:
  • In a large mixing bowl, combine the cooked macaroni with the cheese sauce, ensuring all the pasta is well-coated.
  1. Prepare the Topping:
  • In a small bowl, mix the bread crumbs with a little melted butter (about 1-2 tablespoons) until the crumbs are evenly coated. This will add a nice crunch to the topping.
  1. Assemble the Dish:
  • Pour the mac and cheese mixture into a greased 9x13 inch baking dish.
  • Evenly sprinkle the shredded cheddar cheese over the top of the macaroni.
  • Add the buttered bread crumbs on top of the cheese layer.
  1. Bake:
  • Place the dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and bubbly.
  1. Serve:
  • Let the mac and cheese cool for a few minutes before serving. Enjoy this creamy, cheesy delight!
Tips:
  • For extra flavor, consider adding spices like paprika or a pinch of cayenne pepper to the cheese sauce.
  • You can mix in additional ingredients such as cooked bacon, jalapeños, or veggies to customize your mac and cheese.
  • Leftovers can be stored in the fridge and reheated in the oven or microwave.
