The game is nicely balanced so you can win the game even if your RNG is bad if you're skilled, but still random enough that you sometimes get crazy synergies that just blow the enemies apart.

I never played the original, so I can't comment on how the remake changes things for the better or the worse.
I can, however, say that the game feels very complete as it is right now. The controls are nice on controller, but a friend of mine (who plays better than me) plays with keyboard and mouse so it is doable.
It is a very different game where even the smallest mobs can kill you if you aren't bringing your ace game. I only play when I have time to sit down, pull the curtains and concentrate 100 %.
I really like the gear and leveling system where it is less about finding a better weapon and armor and more about finding the weapon and armour that suits you. The thing that matters the most is experience, not the kind you get for killing mobs, but the kind you get when you play the game. When to time your attacks and parrys. When to block and when to roll.
Your second playthrough will be significantly different from your first, and there are lots of different ways to specialize your character so I don't think I will limit myself to two playthroughs.

It's a fun game the gameplay is nice and it's overall enjoyable. Not much replayability or endgame content, but you can always spend some time becoming invincible or playing Whored mode...
