Today Crusaders kings II stands as the best grand strategy game from paradox, and at the same time it is the simplest for new players to grasp the basics. The expansions add a enormous ammount of content and there is great variety in gameplay depending on your culture, religion and government type. Be prepared to log hundreds of hours into the game and not having explored even half of it's options.
