What is "roleplaying"? People might mistake "roleplaying" as playing RPG genre games but that's not the full extent of it. It's all about expressing yourself through your choices. Games offer us a variety of choice via their mechanics or their worldbuilding and we constantly express ourselves through that.
Take a FPS, traditionally not a game considered as "roleplaying", your weapon choices will define how you roleplay within that world. Shotguns are different to sniper rifles, you've expressed a character via that choice

I also enjoy series of games, where you can take the same character sequentially across the games - ideally while importing the character stats and decisions from previous games. Series like Mass Effect, Witcher (to a lesser extent), and Quest for Glory are all examples of this type of game.
