Start with an onion, peel it and chop it finely. Slowly fry the onion in oil until it is very dark, because then it adds a good colour to the stew.
Add mini meat cubes and fry them well, sprinkle with sweet paprika, salt, pepper, cumin, bay leaf and cover with water - the cubes must be about 2/3 submerged.
Simmer the meat until tender, it is necessary to watch that it does not start to burn, and gradually baste it. The stewing will take about 2 hours.
Prepare some roux/stock. Sauté 2 tablespoons of flour in butter or oil until it's nicely browned and fragrant. Stir the roux into the hot stew and boil everything for about 10 minutes. Then season the stew with salt and pepper, add some grated garlic and marjoram. The seasoning is up to you if you prefer a stronger or milder sauce.
