To make Alfredo pasta, start by preparing egg pasta. Pour flour on a clean surface, creating a well for the eggs. Crack the eggs into the well and whisk them, gradually mixing in the flour until combined. Knead the dough until smooth, then cover and let it rest for 10 minutes.
Divide the dough into portions, and use a pasta machine set to the widest setting. Dust it with flour, feed the dough through, fold it, and roll it again, adjusting the thickness until you reach your desired level. Cut the pasta into strands and dust with flour, covering with a kitchen towel.
Boil a large pot of salted water. Cook the pasta for about 3 minutes. Reserve a mug of pasta water, then strain the pasta into a bowl placed over the pot. Add butter and toss with tongs until melted. Gradually mix in reserved pasta water and Parmigiano Reggiano, stirring until creamy.
