From Rules on nwpublic:
"If you had charged with your men, and all of them were killed, you are allowed to keep fighting on the horse, but when the charge ends you must dismount and join friendly line."

What is the definition of "charge ends" ?

The charge is considered to be over when you have either killed the unit that you originally charged, or have pulled away from combat signifying the end of the charge. After both instances you must dismount with friendly lines .

In rare cases when I attack enemy unit, lose all men, but in meanwhile another enemy unit joins the fray on the same area I'm allowed to stay even if first enemy unit dies out?

No. To be honest its best to pull out when you have noticed you have lost all your mounted men otherwise if an admin sees he will see a lone cavarly commander attacking as rambo. But leeway is given if he sees you charge in etc. But its not good to stay longer than you need too.

I can't find minisiege in the server list, idk why, pls help :P

The server has changed region recently from France to Germany. Maybe you are on the "Favourites" tab at the top instead of "Internet"? If not, then I'm not sure why
