My all-time favorite cooking show has both excitement and thrilling suspense: 'The Great British Baking Show'[www.pbs.org] (a.k.a. 'The Great British Bake Off' outside the US). Such a great reality TV cooking show! I'd never seen people burst into tears when their souffles went flat.

Haha yeah that would be an awkward click. I'm sure I can find some of those other sites easily but that would be in the bedroom thread or something :steammocking:

It took me a while to watch the Great British Bake Off because I suck at baking and it's a sore topic for me (no, really it's just because there is only so much food tv my girlfriend will let me watch)

And I never got how people can get flat deflatable soufflés. I suck at baking and I have never had a soufflé go limp ever.

On the other hand, I have no idea how they even make soufflés in those cooking shows. With all the cleanups and resets and cuts...

Yeah I know some of you are going to be mean and say British cuisine is not exactly known the world over as... hm... delicious but they'll change your mind. Also, lots of influences from all over. And a lot of highly awarded chefs are working in the UK right now. So for eye candy, check it out.

Yeah I know some of you are going to be mean and say British cuisine is not exactly known the world over as... hm... delicious but they'll change your mind. Also, lots of influences from all over. And a lot of highly awarded chefs are working in the UK right now. So for eye candy, check it out.

I somehow knew Britain must have 3-star restaurants, however I never really thought of British fine chefs. It's good that more and more countries are breaking into the 'haute cuisine' thing, that used to be purely French! :)

Oh yeah the London food scene is on fire. So are Hong Kong's and Dubai's by the way lol.
Don't get me wrong, Paris is still the place to be to learn technique (I should know) and there are some great kitchens to work in (mostly in high end hotels if you want some creativity and modernity) but London, Las Vegas, Dubai, HK, those are the places young hungry chefs with talent go to make their mark.

So yeah they're still using a lot of French classic techniques but they also use modernist tools and techniques, exotic ingredients from all over that you will be hard pressed to find in a lot of premium restaurants in Paris.

I'm trying to figure out how to make haute hamburgers (and possibly hot dogs) -- both of which are typical, working class foods. In one of my fave movies Ratatouille, the lady chef said ratatouille was a 'peasant (working class) dish' yet was able to turn it into a fancy French dish just by the way she thinly sliced the ingredients & carefully placed them on the plate, instead of chopping them into cubes and tossing them together in a bowl. Maybe you might have some tips on what to do about the burger? :D

Thanks for the link -- I *just* realized there's a free video on that page that shows how to make ratatouille! (I had mistakenly thought I needed to pay the $39 subscription fee)

Sorry again for not replying to your other post. I have to travel for work all week and it's been last minute so I've been busy.
I think you are onto something with that gourmet burger. It's fun to play with the elements of a dish and rethink everything.
You can go even further. A nice juicy meatball. Maybe throw in some lamb with the beef for a different texture. Have a nice toasted slice of brioche on the side instead of bread. Homemade ketchup! Awesome! Add some blueberries in it for a zing. Spice up the mustard. A little cheese crisp on the side or stuff the meatballs with a cube of cheese for a melty surprise bite. A nice fresh pickle to garnish the plate. Something colorful like sliced raw beet or carrot sticks. The limit is your imagination.

Real cool online school. I have a couple others in my bookmarks but I need to get to my laptop so I'll post them later.
