I think anywhere on the ground will give mud except the beach which gives sand.

Pretty much this! Any empty land without sand on it, or lava or swamp goo should give you mud! :)

Well, that was one of the most pressing issues I had myself. Mud, I thought I might had to kinda mix water and sand or dig somewhere closer to watery areas. But yeah anywhere NOT near water brings up mud. Thanks for the answers!

yep when you have tons of tree stumps around give your monkey a shovel and show him how to dig up the tree stumps, those also give mud while they clear the area.
