Which animals?
i'm hoping for goats for milk, cheese and hydes, turkeys, ducks- down from ducks could also be used to make high class bedding needed for a high class home type, or something like that), maybe wild ducks, boar and deer for hunting and add hunting cabins, and and "pets" for aesthetics. horses for domestic use should also be introduced, as most people got around on horseback in the era. horses should definitely be utilised outside of work, even if its just an aesthetic animation,such as riding the horse to work, hitching it at work then riding it home and putting it back into the house yard, for example.
so, LOTS of animals can still be added.
I would happy with control of the gardens so I can stop destroying 1000's of vegetables every year.
I personally think that the game does not need more animals, but bakeries would be fine.
probably a pipe dream but some kind of private economy, at least regarding garden grown food. I shouldn't have to buy up every type of produce to resell them. There should be buying/selling privately. I'd even add the ability for village houses to have small chicken coups for small production of eggs/chicken meat.

Buildings wise, some kind of cold storage for meat to increase shelf-life using ice gathered in winter. Salted meats as well, with maybe those being what is traded vs fresh.

To increase difficulty added in variable weather, late/early frosts damaging crops, blights, animals getting sick.

well the game is all about realism and detail. no goats and horses utilised in other ways doesnt fit that, so i really think it does.
If it's a wishlist, I am hoping for more social interactions between the people. So far, the people are well mannered and obedient, like robots. There was some talk about spicing up their lives. Celebrations and things like that would be great. Small towns are all larger-than-life soap operas, after all.

I'm also hoping for some difficulty options as well, but I don't imagine anything I've mentioned would make it into an alpha. With alpha, you're still adding and evaluating fundamental gameplay functions.

Private businesses is on the road map, but it's among the last things I would expect to see implemented.
