I know that I'm not that far in the game so going back to the start wouldn't be a huge deal but if this can happen it may happen later in the game, too.
I really hate watching the videos. It seems like the person making it wanted to goof around as much as play the game and it gets annoying to watch the video take twice as long as need be just to see where I'm stuck at and to figure out how to progress.
About 2 hours of gameplay is me accidentally idling the game when I left my apartment to visit my mom who lives in the same building on another floor.

How did you solve this??? I never got the one on top of the windmill and im stuck in the same spot...
Important to note that there is a difference between the necessary stars (the ones that follow Gris around) and the 'mementos' that look a little bit like them but are different and don't follow Gris around.
The mementos are not necessary for game progress, and if you miss any, you can go back after finishing the game and level selct unlocks, and pick them up then, if you want to.
If you don't have the platforming skills - or patience - to get the 'necessary' stars in a chapter, then you will be stuck in the game, yes.
However, it should be doable for (most) people, with a bit of patience at least.
I myself am an old lady newbie on a non-gaming potato laptop with non-gaming kb/m, and with slow reflexes, and clumsy old hands and terrible at platforming. And did still manage to finish the whole game through. With, yes, quite a bit of effort and retries at some of the more difficult points. But still doable !
