I agree with the desire for an 8-player mode. If possible, it can totally transform the vibe of some games, and also breathe new life and depth into some older games.
You're right about the reworking though. It would be a tremendous amount of work - mostly the UI & stages, but also all the networking (session sizes, sync, spectators, etc), and the feature parity across all the platform builds (desktop, Switch, PS4, iOS). It might not be unreasonable if the team size was more than just me, but it isn't unfortunately. :(
