The one GS move, that's kinda bad is the 2H overhead slash. That hitbox is razorthin. The Moonlight Greatsword has that one.
At least in PvE, it's not too difficult hitting things with heavier weapons. The high damage potential per swing always makes up for that. There aren't any fast enemies, like in BB and later, that should give you too much trouble. Plenty of opportunities for hits with slow, heavy weapons even vs. bosses, like Sir Alonne.
If you find tracking to be an issue, try fighting with no lock-on. You have a surprising amount of control over most horizontal slash moves with (Ultra) Greatswords.
Or just don't move your left stick when attacking and it tracks the locked ennemies correctly
The one handed moveset is much easier to use since it has slashing r1s
