Generally, you have to give them as much as they need and give the rest to endurance because they eat up a lot of stamina. Also, have you ever tried power stance?

No I mean their movesets are genuinely horrible, I tried using the guts greatsword but its incredible how big it is and sometimes how easy it is to miss because the attack it does it very narrow

Try the pursuer greatsword, that thing is on manual aim 100% of the time, since the only horizontal attack it gets is on heavy attacks that are slow, 1-handed has vertical swings (second swing being the only light horizontal) and 2-handed being full vertical swings

i can't tell you the many times i ♥♥♥♥♥♥ up trying to hit a player with it, Still not used to aiming my hits

Oh, you're talking about Ultra Greatswords. I was about to say the Majestic Greatsword and the Good Ole Claymore never fail

yes sorrry i meant ultra greatswords, greatswords are fine tho
Majestic greatsword in left hand is nice. some greatsword have very narrow moveset and you miss enemies the most. SO the greatsword from king soul is actually nice as it has zweihander moveset. zweihander has good reach and it will barely miss. the fume knight greatsword...damn I was missing like 8/10 hits. smashing the sword slightly to the sight of enemy. That was so frustrating :D

Just expirement and find one with a moveset you like. Unlike other soulsgames, movesets can differ a lot within the same weapon classes. Loyce GS is probably the most interesting, in terms of moveset.
The one GS move, that's kinda bad is the 2H overhead slash. That hitbox is razorthin. The Moonlight Greatsword has that one.

At least in PvE, it's not too difficult hitting things with heavier weapons. The high damage potential per swing always makes up for that. There aren't any fast enemies, like in BB and later, that should give you too much trouble. Plenty of opportunities for hits with slow, heavy weapons even vs. bosses, like Sir Alonne.

If you find tracking to be an issue, try fighting with no lock-on. You have a surprising amount of control over most horizontal slash moves with (Ultra) Greatswords.

It doesn't help that the basic UGS is confusingly named "greatsword".

I think there is a setting to disable the stick aiming for big weapons, it can help
Or just don't move your left stick when attacking and it tracks the locked ennemies correctly

The one handed moveset is much easier to use since it has slashing r1s
