It's cliche but try updating your video card driver and see if that fixes the issue.
On the later bosses, it sure would be helpful to use it more than once though.
This seems to be just a bug that needs to be fixed. I would like to fight bosses without holding back my strongest attacks in fear of having to restart the fight.

When they had an update a couple days ago or so I thought it was to fix that tbh, but nah. Still an issue.
EDIT - I have now just learned that it also happens if you restart a boss fight after you die. The game still counts it as a second attempt even if it is the first after you restart. So annoying.
