Is it rare to see a Pink Glowing Scania?? Cause i've seen it 3 times now

That is very likely a mod issue.

Are you running truck traffic mods?
I'm running Jazzycats but haven't seen one yet so I'm assuming (bit dangerous) that it's OK

Me too, but still not seeing it but then it doesn't add traffic, just increases it as it says on the tin.
I'll keep an eye out for it

Pink is the default color/texture indicating a missing texture. Lucky it doesn't crash the game entirely.

Having said that, when it happens you should be able to find warning/errors in your game.log file which could help narrow down the root cause.

Verifying game files not a bad idea either.
