Extra actions?
Am I right in thinking when you buy extra actions in the upgrades menu that is the same thing as just meaning that if you have extra monster girls they also get to do a stat raising activity, or am I missing something? I can see the extra orb icons but there is no indication that they are being used up so really not sure.

Actions are how many times you can interact with your Monster Girls or the shop owners in the town.

Each time you talk to a Monster Girl, give a Monster Girl a gift, or talk to a shop owner, you use one Action Point. When fully upgraded, you will have five points to spend as you like per week. One thing you can do with the extra points is talk to the shop owners to speed up unlocking their upgrades, which will improve Monster Girl stat gains while decreasing energy and motivation drain for the main shops, and increasing how much energy and motivation is regained by upgrading the Bathhouse.

Thank you - my next problem is party composition - I've made a team that looks cool but can't really do much damage, just trying to get to a dungeon boss to unlock more stat building then I'll experiment a bit more.

Same. I was able to get through two Dungeons with a single Zombie (mostly due to luck granting multiple Frenzy and Stun relics, partly due to using Block to raise her armor which drastically increased her survival and increased the damage of Shield Bash, and a little bit of save scumming when things started to feel a little too unfair), but the final boss of the second Dungeon had me feeling like you're not really supposed to only bring one Monster Girl past the first.

My current team composition is a Kuudere Golem (custom summon with 130 in all starting stats), a Dandere Mushroom (custom summon with 85 in all stats, experimented by modifying the save to give her 130 in all stats), and my original Bakadere Zombie (pretty mediocre stats, but she really grew on me over our time together to the point where it'd feel wrong remaking her and training for better stats).

Front: Golem, 500 Health, Defense, and Strength, 486 Accuracy, 130 Dodge, Brick as equipment to raise blunt damage. She starts each battle with 50 armor, and her first turn is either spent on Stone Fist (damage increases based on user's Armor), or Rock Solid to raise her armor to 175 if we're up against something stronger like Bears or Mimics. If I can get my hands on a Geode (reduces orb cost of skills by 1) or a Red Stone and an Hourglass (generates a red orb at the start of the holder's turn, recasts start of battle relics every turn), I'll spam Thousand Cuts to build Bleed Stacks on the opponent (extra helpful if someone in the party is holding a Blood Goblet to generate Frenzy every time someone gains a stack of Bleed).

Middle: Mushroom, 500 Health, Strength, and Accuracy, 261 Defense, 130 Dodge, Rubber Boots as equipment to generate a Blue Orb every turn. Most of the time I just have her spam Wave Crash due to the Blue Orbs she generates causing the skill to hit all enemies. If we come across a Wave Pendant, it always goes to her to further increase her damage. When it comes to her Cleansing Spores, it's either used to remove Bleed Stacks placed on her from my Zombie casting Stitches on her, or it becomes a team wide heal if she's holding a Blessed Egg. Extra points if someone in the team is holding a Holy Scripture to damage the enemy team every time the holder is healed. Her Toxic Spores, which adds 3 Poison Stacks to all enemies every turn, also helps make my Zombie stronger.

Back: Zombie, 500 Health, Defense, and Strength, 355 Accuracy, 116 Dodge, Plague Doctor Mask as equipment to deal more damage to poisoned enemies. Her first turn is spent Vomiting on either the second or third enemy to start building stacks to increase her damage (depends on what is and isn't immune to poison), while my Mushroom and Golem tend to deal enough damage to take out the first enemy in one or two turns. Her damage is pretty low compared to my other Girls, so I tend to give her all Frenzy related relics we come across to give her whatever damage boost I can (these Relics would probably work better on my Golem, but I'd rather help bring up my favorite of my Girls), otherwise I give her any Venom Glands we come across to increase how many Poison Stacks she applies and Purple Moss so she heals from enemies taking poison damage. Depending on what we're facing, she may cause the enemies to gain an Orb Overload due to Vomit generating a Purple Orb every time it's used, otherwise she can cause a Purple Overload and place 40 Poison Stacks on all enemies that aren't immune. Last time we faced the Final Boss of the first Dungeon, she was able to hit the boss for over 1,000 damage, and if that didn't kill him outright, the +138 Poison Stacks she added with one attack definitely would've.

All in all, I'm sure there are better team comps out there, but this is what has been working for me so far, though I may end up remaking my Mushroom and Golem when I have the 20 Large Mile Stones required. I also play with Lifeforce disabled so I don't have to worry about my Girls dying or wasting Mile Stones to raise their remaining Lifeforce by one (though I'd probably have it enabled if the higher ranking Mile Stones gave more Lifeforce).
