How far can I get in the story without leveling my own characters?
So, one reason why I kept leaving HI3 was because I need stamina to level and gear my characters, but at the same time, for story as well, so unlike the other gachas I play, I can't experience the story at my own pace while also leveling my characters, so I'm curious, how far can I can get in the story without leveling characters?

I was thinking to do the story to the end and I can focus on leveling characters afterwards.

For story, only the first few chapters of the game force you to use your own valkyries. Otherwise they lock you in to use specific trial characters with preset equipment/stigmatas.

You can clear the entire story without bothering with obtaining/leveling specific valkyries. I mostly did, but doing the story will grant a lot of crystals/resources by itself which will help getting new stuff anyway. Using stamina for leveling and getting materials is really just "something to do" once you've cleared the story.
