After I started demo and was getting to the stage when one start turtorial (gain control of character) I could then enter into settings, from there it looks like it is possible to change keybinding for keyboard and mouse.
How well it will work during real game play I don't know yet and it will probably be depending on what difficulty you pick.
Some of it will also depend on your keyboard and mouse app/driver where you can set up macro or assign keys/mouse for other settings if game doesn't offer bindings that is optiomal for your way of playing.
As an example my Razer Naga's mouse have 9 thumb keys that can be assigned (Naga have 3 different options here; 9, 12 or 2 key for thumb). It also have a scroll wheele that one can push down for clicking otuside of LMB and RMB, or tilt and 2 button below scroll wheel (DPI and Profile button, but can be assigned to other keybind), so there is a lot of options to assign keys as long there is key/mouse command for that in game. Same with my Steelseries keyboard (tenless) where I can set up different profiles.
My point here is that keyboard and mouse doesn't describe if you have full range of options to set up and controll where to use a keybind (on mouse or keyboard). There is large difference if you only have a basic mouse or a mouse which have main focus to be fast for FPS games, but very few extra keys to assign keybindings for games that make use of more RPG elements like crafting etc, then it will be harder to get most controls to work.
Anyway it looks like there is support for KB+mouse as well for Controller or Gamepad.
I have just played a bit with demo version of this game and discovered that there is no direct key for getting to Inventory, you will be forced to use one key which in turns open map and there you have the rest of your other menu to Quest, Later unlocks of build(or whatever this game call it for changing how your weapon or your character work during fights) and inventory. From there you care forced to use WASD keys (to navigate in "player menu" as it is called.
I always set my movement keys to ESDF instead of WASD, so when I open Player Menu I will instead get to next option in while pressing "E" as that is control to navigate forward in that menu with "Q" for left and "E" for right, "W" and "S" in Inventory will change filter (3 filter).
Another Issue I discovered where that when I want to read a letter (you get a letter early in game as part of why this couple in the first place got to this place) it show in tooltip to press "Enter", but that will only get you back into game world instead of open that letter to read, so you will need to click on to be able to read it.
So there are some limitation that you need to be aware about like how game expect player to keep default keybind and not do changes as in that case you will have to figure out how game changes modes.
Games like RPGs make use of different mode when you open Player Menu then when you are in combat mode or in non-combat mode where same keybinding can change what it will do - like "W" in Inventory wont make you move forward or force you out of Inventory mode, but instead change which filter that are used to show items in Inventory.
There is a keybind for open map, but that is rather useless as you will still open the same Player Menu which have its own keybind and you will make use of the same control for navigate between Map, quest, Inventory etc from left to right (Q and E; where W are supposed to be forward key for movement if you don't change it to ESDF like I do).
Demo version is a full version (with limitation of how far you can play) which means that you can close Demo version, purchase the final version and then continue where you left off in demo version with retail version.
On my 13700K, RTX 4070 TI and with 3440 x 1440 resolution (UWD 100 Hz refresh display) it seem to work well enough to keep high enough FPS without DLSS upscaling and everything on the highest setting for in visual in game elements.
It looks pretty good in my opinion with exception of what I wrote above about controls for KB and mouse.
