I read on the wiki that there are like 7 upgrades you can randomly get from harvesting a certain plant, do you need any of them for achievements or are they optional?

They aren't mandatory for any achievement, but there's an achievement for unlocking 700 uprades. There's 716 upgrades total so you can skip few, including the garden upgrades.

Any achievement*, other than shadow ones, you receive is technically an 'upgrade' to your milk boost because it augments the bonus for each one acquired.
