Keeping a version with the old UI would make it much more difficult to maintain the game since I would have to add UI elements to both versions in order to support a small minority of people who support the old UI, so I don't plan to support that, sorry. Eventually Resource Packs might be feature rich enough that you could just do that yourself, but at the moment they don't have the capabilities.
